Corn and Bean Salad with Cilantro Lime Dressing

This salad is hearty and can stand alone as a meal or serve as a delicious side, especially during BBQ season!

Ingredients
15 oz/455 g/1 can Corn (optional: fire roasted)
15 oz/455 g/1 can Black Beans
1 red bell pepper, diced
2 cups cherry tomatoes, sliced in half
1 avocado, diced
1/3 cup red onion, finely diced
1 cup cilantro leaves, optionally chopped
1/3 cup olive oil *
1/3 cup lime juice (1-2 limes)
Salt to taste
Directions
Drain corn and black beans. Rinse black beans and add to bowl. Salt and mix to let seasoning disperse.
Add diced bell pepper, sliced cherry tomatoes, diced avocado, chopped red onion, cilantro, olive oil, lime juice and a pinch of salt to the beans and corn. Stir to combine, and serve!
*an option with this recipe is to add the stems from the cilantro to the olive oil and refrigerate overnight to let the flavor of the cilantro seep into the oil. Then, remove the stems from the olive oil and use that in the dressing for extra flavor!
